One of my many faults that I am trying to overcome is the fact that I am a lousy breakfast preparer.
During the work week, I am often in a rush to get the kids to school and make the 30-minute, 12-mile commute to work. While I would love to have a sit-down, healthy breakfast with my family every morning, we also don’t want to have everyone up at 5 a.m. to do so. At 5 a.m., I’m doing other stuff related to triathlon/quadrathlon training, homework, and book authoring.
So, like everyone else, I make compromises on my nutrition. The worst-case, and unfortunately all too frequent, compromise is the stop at Starbucks for a foofie-coffee and a fat-laden pastry. That stop add 10 minutes to my commute and takes $7 from my wallet.
 
I’ve been in the market for a good, whole-food breakfast that’s quick to make and can be consumed on the road if I’m in a real crunch. One breakfast goodie that has graced my menu lately came from a comment posted here by IronMom. In her honor, I’m calling it IronMom’s Power Custard Oatmeal. Now, Robin (aka IronMom) doesn’t call it that, but I had to come up with something catchy to get your attention.
Here’s how it works:
The taste is out of this world. It’s almost like having bread pudding for breakfast with a nice bit of protein, whole grains and fiber to boot.
You can also top off the oatmeal with a raspberries, strawberries, or blueberries and/or sliced almonds to round out the nutritional value.
Just think, all of this goodness for a three-minute investment of time. Plus, the $7 I save from Starbucks would probably buy a week’s worth ingredients for this yummy breakfast.
