Kimberly Edwards shares another great healthy recipe that also tastes terrific! A perfect accompaniment for any main meat dish!
The key tasty ingredient: red rice.When I eat rice, I prefer non-white varieties, if I can help it, because it is healthier for you. So, I love to create fabulous and flavorful rice dishes with red rice or brown rice. Red rice has an especially sweet and nutty taste!
This is a really great recipe and can be served with so any main dishes or made into a complete meal in itself by adding tofu or beans!

Type: Side Dish
Serve With: Any Pan-Asian Main Dish with Meat or Fish
Prep Time: 5 min
Cook Time: ~ 30 min in a rice cooker
Yield: 4 1/2 cups = 4 servings

* Tip: To make this a complete meal in itself, add either tofu or some fabulous cooked beans to make it a complete protein!!! Awesome!

Instructions:
1. Rinse brown rice under cold water.
2. Add all ingredients to rice cooker and turn on.
3. In approximately 30 minutes, fluff with a fork.
4. Serve with a great main dish of meat or fish, such as Coconut Garlic Clementine Tilapia.
5. Enjoy!

Today, my mother ate this rice with my Spicy Thai Ginger Coconut Chicken Soup! Awesome flavors!
